The importance of eating PINK RED

Anthocyanin, a natural pigment, gives pink/red veggies their vibrant colour, which absorbs green and yellow light. Seedlings often produce pink/red leaves to help protect them from sun damage. 

This fruit & veg provides a number of beneficial properties - high in the antioxidants to help protect against infections, and the anthocyanins and betalains are thought to aid the relaxation of blood vessels and contribute to improving blood pressure.

'All the Pinks' features: 

Radish 'Rioja'
This strikingly deep purple microgreen is an easy and speedy grow, and is said to contain up to 40 times the levels of vital nutrients than the mature bulb. They mimic their larger selves in flavour profile and are a favourite among chefs for both their flavour and visual appeal.

Amaranth ‘Red Aztec’
Amaranth is an ancient grain which was enjoyed by the Aztecs of Mexico. A cup of these is said to meet up to 97% of your RDA for Vitamin A. Chefs are big fans of these seriously good-looking micros - a vibrant flash of colour to any dish.

Red Cabbage
With 147mg of Vitamin C per 100g, red cabbage is brilliantly nutritious and thought to help fight cancer and diabetes. Red cabbage is high in fibre, which aids in digestion. The flavonoid (called anthocyanin) in red cabbage gives it its colour, which is also found in blueberries & flower petals.

Stunning microgreen kit from @sowfreshofficial. I am absolutely thrilled with the quality of this kit, the tubs are recycled plastic and dishwasher safe, it isn’t grown in soil but coir which is a byproduct of coconuts, this alone makes for excellent composting material once your microgreens have grown 🌱 ...I adore the wooden box design.

I really like the quality of the box and black tubs, how the amount of seeds and coir is measured out makes things very easy and the instructions are very clear. The kit is nice and compact too to fit on windowsills.
